The Conservatory

The Conservatory brings together three dining experiences under one roof - Three Bottles, Chaan, and The Sweet Shop,  offering an array of British-inspired and authentic Cantonese food, beverages and sweet delights, as well as a Tea Room for guests to enjoy grab-and-go from breakfast till late.

The Conservatory draws inspiration from London's classical architecture and contemporary urban lifestyle, with dining and beverages available at any time during the day - Cantonese favourites, western classics, bakery treats, dine in or grab-and-go. A Tea Room flows into a Londonesque casual restaurant and bar, and a classic Cantonese kitchen serves all your favorites. The Sweet Shop is a sugar lover's paradise of traditional British-inspired sweets, cakes and lollies, perfect for occasions and gift giving. 

 

 

Three Bottles

A contemporary take on the classic British restaurant and bar but with a twist. Three Bottles delights guests with a mouthwatering range of traditional English sweet and savory fare showcasing contemporary breakfast sets, signature afternoon tea options, the comforting flavours and aromas of a fresh bakery, alongside an extensive menu of crafted beverages and cocktails served all day long. Guests can take a seat in the comfort of our the stylishly appointed lounge with views to Shakespeare's Hall. As the sun sets, Three Bottles is the perfect meeting place for drinks and classic cocktails with a twist.

 

In Regency England, being a bottle man was acceptable, expected and respectable. The most brilliant men of the age all tried to achieve this dubious "three bottle" celebrity status. The story of ‘Three Bottles' has its origin dating back to former British Prime Minister, William Pitt the Younger Prime Minister by the age of 24. Heralded throughout history as one of the great men of politics, he was also a heroic drinker. Three Bottles takes reference from the traditional London pub, with a bar at which draft beers are poured and cocktails are created setting the backdrop for passers-by to see into the restaurant through the deliberately open facade. The backbar has a contemporary take on the classic pub vibe, with a variety of bottles both modern and aged which form an elegant and whimsical display.

Chaan

A bustling demonstration kitchen for breakfast, lunch and dinner, and featuring the best of Cantonese culinary specialties with origins near and far. Chaan - meaning ‘meal' - features a selection of traditional Chinese comfort food including handcrafted noodles, rice dishes and heartwarming congee available throughout the day.
 

With a busy yet intimate atmosphere, guests can enjoy their meal facing the live kitchen to watch the mastery of the kitchen - the art of crafting fresh noodles by hand, and shaping intricate dumplings of various shapes and fillings. Perfect for small groups, Chaan has an extensive dining area with intimate seating.
 
Chaan's signature favorites include handmade suijiao, boiled dumplings filled with beef, cumin and coriander, or pork and mushrooms, braised beef brisket and tendon with hand-pulled noodles served with dark broth, as well as rich and classic flavors of congee - including abalone and chicken, pork and century egg, chiu chow minced pork and oyster, and the local classic fresh crab.
 

The Sweet Shop

Inspired by old school London sweet shops that became popular during the Victorian era, The Sweet Shop showcases a vast variety of sweets in traditional glass sweet jars.  Perfect for gift giving and keepsakes.  Adjacent to The Sweet Shop, you can spot a vintage ice-cream cart serving decadent homemade ice-creams with unique and seasonal flavors.

The Tea Room

As Tea plays an important part of both Chinese and British traditions, Tea Room represents the ‘center' of The Conservatory's three venues connecting the spaces together.

The Tea Room offers a vast selection of premier Chinese teas, Western and contemporary tea blends.  Guests can order and watch their tea being brewed.  

Old-time Chinese buns as well as typical Western bakery favorites are freshly baked daily.  Pineapple bun, spicy sardine bun, trinity burnt cream donut, canelé, Mexico bun with red bean paste and daily specials are available for guests to eat in or take away.

Afternoon Tea

A contemporary take on this cornerstone of British tradition, The Conservatory offers a refreshing Afternoon Tea Set daily from 3-6pm, with a savory delight including pickled egg sandwich, red salmon pâté, smoked chicken waldorf and silverside of salt beef, as well as classic British summer sweet treats including a Sherry Trifle and Cherry Bakewell slice, the white swan and chocolate fudge cake.

The Conservatory offers a few special ‘Cream Tea' options featuring a selection of mouthwatering layer cakes and English scones for the perfect accompaniment to their coffee or tea selections.
